Kiwior is definitely off the summer. He's been bench warming for ages, has no realistic path to regular football, and there have been constant stories that he's not happy with the situation. When he goes we'll either need a fullback or a CB and I don't think Arteta wants to move Cala to CB so it'll be a CB.
Pepe LeFrits I reckon when he goes he'll be a star elsewhere andthe management will come in for a lot of criticism for letting him leave. Realistically though, he's not at an age where we can keep him and we just need to accept the positives of having a couple of superstars in Gabriel and Saliba mean we might not be able to retain other players of a high calibre in that position behind them for long.
I dont know that I agree that he will move on and become a star anywhere. I think he would be a solid CB somewhere else when he has regular playing time. But like you said, he can't displace Big Gab or Saliba, so he's at an age that he needs to be moving his career forward. He probably won't get that here.

I think Ekitike is the guy to get up front. I’m hoping to see more links to him. He needs to get a lot stronger to thrive in the PL and avoid injuries, but we have the coaching to give him that. Bonus would be to give Saliba another French teammate which we know he wants.
