Yeah, Larsson only played a couple of games in England but he played for years in a league where big centreforwards were the norm. Ferguson tried to sign him several times but failed.
Anyway, the bottom line is that you don't need to be tall or quick to be a striker (and you don't need to be a centreforward to be a striker - nor does every team need a centreforward). What you need is some form of edge over the defender. Technique is as valuable an attribute as anything else in that sense. Someone like Giroud who's criminally slow and a bit of a donkey with his feet has to be physical because there's no other way for him to shield the ball. Agüero has other options. And while it's true that he is pretty fast he isn't living off his pace in Premier League apart from when he counterattacks. It's all about technique and movement. van Nistelrooy was tall and big but never particularly physical or good in the air. He didn't do holdup play. He was just a master of beating the offside trap.
The main reason we have relatively few examples to go around on - although several genuine have been provided - is because Premier League has traditionally favoured systems with big, traditional centreforwards. It doesn't mean you can't play any other way. Arsenal would never have won the league under Wenger if that was true.
