I think 20 years ago Milan Lab was at the forefront of sports medicine in football because they didn't want to get caught holding the bag with another Fernando Redondo. Barely a decade later they ended up having a team that won multiple Champions League titles with most of its prominent players way into their 30s.
Since then literally everyone has been copying and improving upon them, and now nearly all of the best players in the world are way beyond 30; a situation that would have been unthinkable not too long ago. We were marvelling over the fact that Bergkamp was 34 in 2004 and still playing football. Paul Scholes was a freak for still playing at 36. Those are the ages of Luca Modric and Karim Benzema nowadays; the current and the next ballon d'or winner.
If Saka can avoid nasty injuries resulting from tackles (touch wood) there's no compelling reason why he shouldn't still be playing at a very high level 15 years from now, even though he broke through at 17.
