Theo is overated, he misses just as many as he spurns, anyone who wants Theo as a regular starter has no right to expect to win the league, no point in rehashing that debate.
First off, I agree with your fundamental point that we need a world class striker. It's the missing piece in this team and one that will be very hard to find.
But on your point about expecting goals to come from multiple players in big games. In practice, it doesn't necessarily work out like that.
When we play Man Utd, I'm always wary of Rooney and van Persie scoring.
When we play Chelsea, I'm largely wary of Drogba/Lampard and these days - Hazard/Costa scoring.
When we play City, I'm wary of Aguero scoring.
I get we need another clinical finisher in the team, but very few English teams have more than 2 players in that mould anyway.
