Just a tip, but learn how to use the bow. It's possibly my favourite weapon in any game ever... as long as you don't get the perk that slows down time. It's not that big a deal since you're playing on PC (it's easy to remove again with console commands if you're not happy), but it really wrecks the whole dynamic. It's such a fantastic weapon otherwise.
I've basically been playing a DnD thief, using a bow and dual-wielding daggers. Great fun so far. I've mostly been leveling sneak, archery, and pick pocketing. I've started dabbling in the crafting system too which is very interesting. Trying to level up smithing, enchanting, and alchemy, for good gear and poisons.
The game is absolutely massive, I still haven't left whiterun and its surrounding areas. I'm currently saving up to buy a house, then I'll head south to Falkreath I think.
