Last year they struggled with a lack of proper striker. This year they have Mirallas, Anichebe, Naismith and Vellios.
They also bought Oviedo for LB backup... quite promising for them.

I've looked at their squad and it's made of up decent/good with one or two excellent players. Their biggest asset by far is their manager.
This is not new, you see this every year - usually with Tottenham, occasionally with the likes of Aston Villa and Newcastle. Everton will have a good season and finish 5th or something - possibly giving the fourth place team a scare if they're not too careful.

Was under the impression that, apart from against us, they'd been doing ok just not getting results. And to be fair they had a day to forget against us, no luck at all.

I was actually surprised at how well they played. They deserved to get away with a few more points from those matches. They had a mare against us and were very unlucky in the other games. If they sort out the defensive line and find a better pressing midfielder they'll comfortably avoid relegation.
