If anyone can make a 3-5-2 work, it'd be Conte though. And I think he probably will line up that way because he has the players in the back five for it with Florenzi and Giaccherini, and all the Juve lads at CB. Conte might choose to play a shithouse midfield 3 (something like Motta, Parolo, Jorginho) but it's not even necessarily that bad a choice given their other options there aren't brilliant.
Italy will be fine. One of the most important aspects of international football is the manager, and Conte is one of the best at this year's tournament. He may not be everyone's favorite stylistically, but he's leagues ahead of fucking Wilmots for example.
