I read a chunk of EU stuff in my late teens, and i think it gets lionised a bit too much. there's plenty of silliness and inconsistency in there as well (luuke skywalker anyone?). There's also more scope to ruminate and deliberate over the nature of the force in novel form, which makes it a favorite of the more hardcore audience. If you look purely at the movies, burns is right - there's not much meat there outside of jedi vs sith and empire vs rebels.
Outside of that, there doesn't seem to be anything worthwhile going on in the galaxy. TLJ tried to introduce some moral greyness and nuance with the del toro plotline, and it just felt wrong
It would take something amazing to rejuvinate the mainline trilogy at this point
